Borderless Madras is a playful and imaginative tasting experience built around one simple question: how would Chennai's iconic street foods look, taste, and feel if they had evolved in another country?
This is not fusion for the sake of it. Each course explores how local produce, traditional cooking techniques, cultural rituals, and culinary philosophies from another part of the world could have shaped these deeply familiar dishes. Every plate remains recognisably Chennai at heart, while fully embracing the identity of its adopted homeland.
