Malaiyaga Tamilar Suvai – The Food Story of Sri Lankan Plantation Tamils

Malaiyaga Tamilar Suvai is a course-wise tasting menu that explores the food culture of the Hill Country Tamils of Sri Lanka—communities shaped by plantation life, migration, resilience, and the rhythms of the highlands. 

The menu draws from everyday estate kitchens, celebratory feasts, colonial bakeries. It highlights foods cooked with limited resources yet deep knowledge: rice and lentils, coconut in many forms, foraged greens, root vegetables, black pepper, fruits, rationed wheat flour, modern plantation crops and slow, patient cooking. These are dishes born out of sustenance, labour, and memory.

This experience focuses on minimal intervention and honest flavours. Techniques remain traditional with chefs' influence and interpretation using ingredients and terroir of the plantation land, while presentation is refined and contemporary. The intention is not to reinterpret or fuse, but to translate—allowing humble dishes to be experienced in a new context without losing their soul and echoing their stories.
